Fire and Ice

With all the running around this summer, I’ve found precious little time to relax. So I developed this recipe to give myself a little treat now and then―you know, that way I didn’t go postal. Now that back-to-school is here, I plan to enjoy this treat all by myself on the porch with my favorite book. Ahhh…back-to-school. It’s the most wonderful time of the year :)

Cafe Mocha Chiller

4 tablespoons powdered coffee creamer
1/4 cup sugar (or equivalent of your favorite sugar substitute)
1/3 cup chocolate syrup
1/2 teaspoon vanilla
6 cups brewed coffee (still hot to melt sugar)

1. Combine all ingredients in carafe, mix thoroughly.
2. Chill for at least two hours. Serve over ice and enjoy someplace beautiful with a good book!
